Pidan Doufu (pee-dahn dough-foo) is cold appetizer of soft tofu topped with the famous Chinese millenial egg and vinegar. While definitely not a main course and a bit difficult to grasp with basic chopstick ability (I recommend going with a spoon on this one), Pidan Doufu is an excellent starter and a great dish for anyone who is attempting to be a vegetarian in China. Not only is Pidan Dofu a great item to unite vegetarians and meat eaters, but it's also quite versatile, easily modified to resemble a variety of regional cuisines, whether it be spicy Xiang/Hunan (pictured) or more garlic laden Beijing or Dongbei flavors.
