Di San Xian
(pronounced dee sahn shyen) comes from the Dongbei (northeast) culinary tradition, most commonly associated with Heilongjiang Province and cities like Harbin and Dalian in Liaoning Province.

Di San Xian is a simple, yet tasty dish of potatoes, eggplant and green and red peppers, sauteed and lightly pan fried in garlic and oil.

This dish is available at most Dongbei restaurants and many eateries that don't specifically concentrate on northeast cuisine.

A favorite among ChinaTravel.net staffers, Di San Xian is a hearty dish that is filling for both vegetarians and meat eaters alike, and offers a rare opportunity to consume thick-cut potatoes since most Chinese potato dishes use thinly-sliced strips.
