Congbao Yangrou (pronounced tsong-bow yahng-row) is a great dish of quick-fried mutton, served with scallions, onions and peppers. While mutton (yangrou) in general is most often associated with Xinjiang cuisine, Congbao Yangrou is available at many restaurants around the country, but not indigenous to any particular region of China. This is the first official appearance by a mutton dish in Hungry Dan's Dish of the Day, and I personally endorse Congbao Yangrou, not only because I love the lamb, but also because this entree is generally on the lighter side, not too laden with oil and sauce like many other Chinese favorites.
