Chou Doufu (pronounced ch-oh dough-foo) is the infamous "stinky tofu" that spreads its specific odor through the streets of China.
While the smell of Chou Doufu is, well, quite stinky, the taste, like many deep-fried snacks is tasty and enjoyable. Additionally, although many tofu dishes have an unpleasant creamy or jelly-like texture, Chou Doufu is slightly crispy on the outside and tender on the inside, making it a satisfying treat.
Often served in street stalls, Chou Doufu goes great with peanut sauce or vinegar, or, as pictured, with spicy, red-pepper sauce / la jiao (pronounced lah-jyao).
Understandably, many tourists in China will be a bit frightened and apprehensive to try Chou Doufu, but, more curious and adventurous visitors should brave the scent and taste one of China's most beloved dishes.
