Yuxiang Qiezi (pronounced you-shyang chyeh-zih) is a classic dish of eggplant chunks pan fried in oyster sauce. You may remember the yuxiang sauce from this previous Hungy Dan's Dish of the Day; oyster sauce is one of the more popular marinades in Chinese cuisine. Another great choice for vegetarians in China, Yuxiang Qiezi is available at most Chinese restaurants and is a great addition to a larger meal. Also tasty enough to eat on its own or with a side of rice, Yuxiang Qiezi is a great healthy option to balance out meat and starch-heavy meals. "Always hungry, never full . . ."
